Embark on a cross country road trip through the main street of America, tapping into the nation's rich heritage and the historic days of Route 66. Enjoy breakfast, lunch and dinner in this relaxed American canteen, featuring menu items such as fried green tomatoes, shrimp po’boys, and chicken and waffles with bacon and bourbon syrup. An old-fashioned soda fountain serves up nostalgic milkshakes, malts and spiked floats. The speakeasy bar at Proof features no less than 50 beers, 50 wines and 50 small batch and craft distilled spirits all from the 50 states, come see for yourself if you want proof!

Proof Executive Sous Chef

Chef Jesse draws upon his own experience road tripping across the United States to elevate diner fare from "Main Street" to your plate. He works hand-in-hand with local artisans, growers, craft brewers and distillers to dish up regionally inspired comfort food with a twist. A 14-year Four Seasons veteran, Chef Jesse has been with the Scottsdale property for more than two years and loves calling Arizona home. In his free time, he enjoys working on his 1957 Ford pick up truck, taking his dog for hikes and walks, camping, traveling and eating unique foods.


Tim Hass
Proof General Manager

A passion for the hospitality and restaurant industry began close to home for Proof General Manager, Tim Hass. With a mother in the business, he grew up around restaurants, developing a keen appreciation for great food, simply prepared. Tim joined Four Seasons four years ago, first managing the poolside grill, Saguaro Blossom, prior to taking the helm at Proof. Proof's concept speaks close to Tim's heart, with the emphasis on craft beer and approachable, yet inventive, dishes. In his leisure time, Tim enjoys testing out local restaurants and breweries, or firing up his backyard smoker and grill to craft simple, savory meals.
